Instead, we create our own vinegar-based sauce from scratch, a tangy blend that has been a hallmark of our BBQ for generations. Traditionally, BBQ in North Carolina meant pork, slow-cooked on a grill or even underground, and basted with this signature vinegar sauce. Turkey BBQ, however, is a relatively new addition, only emerging in the mid-90s.
